- Pork chops with bone
- Olive oil
- 4 tomatillos
- 1 poblano chili
- 3 garlic cloves
- 4 green onions
- 6-10 olives to garnish
The first thing you need to do is preheat your Coyote portable grill for 5 minutes. Prior to this, the pork chops must be at room temperature, so they can be brushed with olive oil on both sides and seasoned with enough salt and pepper on both sides as well. Then, coat the pork chops with olive oil on both sides again and set aside.
Wash and peel the tomatillos, poblano chili and garlic and place them on the grill for 5 minutes. Then, take these ingredients to the blender, add the coriander and green onions and blend until you have a thick mixture. Add salt and pepper to taste and set aside.
